Cooking Guide

  1. Shred the chicken by hand or with two forks and add to a bowl.

  2. Peel the potatoes and add to the chicken and break them up with a fork or potato masher. (We’re using the potato cooked in its skin rather than pre-peeled because the potato cooked this way picks up less water, and will taste better, plus there will be less moisture in the potato, which will make it more stable and not fall apart while cooking.)

  3. Tear the parsley leaves from the stalk and chop them finely with a knife, and then finely chop the stalk, and add to the rest of the ingredients that are already in the bowl.

  4. Zest the lemon peel.

  5. Add the garlic powder, ground paprika, salt, and freshly milled black pepper. Mix everything thoroughly.

  6. We make small patties by hand and then stuff them with the mozzarella and shape the mixture so that the mozzarella is completely sealed inside the croquette and shape it into croquette shapes.

  7. Beat the eggs in a bowl.

  8. Place the Doritos in a chopper and grind them finely, and pour in a bowl.

  9. Coat the croquettes in the egg, then in the ground Doritos. (If it seems like the Doritos are not coating the croquette completely, we can repeat the process.)

  10. Cook in the air fryer at 180°C for 10 minutes.

  11. Serve the Doritos with a dip.
