Cooking Guide

Peel and slice the ginger.
Peel the mandarins andseparate them into segments.
Roughly chop the coriander.
Deseed the capia pepper and cut it into larger pieces.
Cut the red onion into larger pieces.
Place all the vegetables in a food processor and blend.
Pour into a bowl and mix with the peanut oil.
Season with salt, add the soy sauce and green chili, and grate in the zest of half a grapefruit.
Serve with chips for dipping.
