  1. Cut the sausages in half lengthways and then slice into finger-width pieces. Add to a hot pan to sizzle, stirring occasionally with a wooden spoon.

  2. Peel a red onion and dice up. Add to the sizzling sausage and saute together.

  3. Crush the garlic and chop finely and add to the rest of the ingredients.

  4. Dice up the bell pepper and the celery, add to the pan and then saute together on a high heat.

  5. Season with salt.

  6. Add the crawfish meat and mix in.

  7. Saute for 2 to 3 minutes, then add the cream and cook for 2 more minutes.

  8. Chop up the parsley and add to the pan.

  9. Grate in the zest of a lemon and then squeeze in the juice.

  10. Lay out your Doritos® Tortilla Chips on a plate.

  11. Top with the crawfish mixture and sprinkle on the grated cheese.
