Peel the red onion, slice it into half rings, and soak in cold water for 10 minutes. Then drain and place in a bowl.
Mix the balsamic vinegar with the honey and pour over the onion.
Wash and julienne the bell peppers. Add them to the onion and mix together.
Using a vegetable peeler, shave the carrot and zucchini into the bowl and gently toss with the other vegetables. Season with salt.
Lay out your Doritos chips in a bowl.
Add the vegetables on top, along with lentils.
Tear the leaves from the herbs and add them in.
