  1. Mix 1 cup of oats with the coffee, honey, vanilla extract, and 1 tbsp cocoa powder.

  2. Let it sit for 20 minutes so the oats can properly absorb the liquid.

  3. To make the cream: In a bowl, mix the mascarpone and cream together. Scrape out the seeds of the vanilla bean and add them in.

  4. Spoon 2 tablespoons of the coffee oats into a glass, then top with a layer of mascarpone cream. Add another layer of the coffee oats, and finish with a little more cream on top.

  5. Finally, sift cocoa powder over the top.

  6. Finally, drizzle with caramel syrup
