Cooking Guide
Slice the cod into finger-sized strips and cut into 2 cm cubes.
Mix with salt and pepper.
Break some of the Doritos® Tortilla Chips in a plate, this will be used to create breadcrumbs.
Toss the cubed fish in flour.
Beat the eggs in a bowl, and add the flour coated fish to the egg.
Then coat with the Doritos® Tortilla Chips.
Cook in the air fryer at 200C for 8-10 minutes.
In the meantime, make the remoulade.
Cut up the pickled cucumber, onion, and parsley into large pieces.
In a high-sided bowl, add the capers and apple cider vinegar.
Add the oil and salt, then mix it all with a hand blender.
Then add the whole egg and continue to mix.
Cut the bag open lengthways to make it a walking bag and on top of the Doritos® Tortilla Chips, add the fish, remoulade and a lemon wedge.
Garnish with parsley.
