  1. Slice the cod into finger-sized strips and cut into 2 cm cubes.

  2. Mix with salt and pepper.

  3. Break some of the Doritos® Tortilla Chips in a plate, this will be used to create breadcrumbs.

  4. Toss the cubed fish in flour.

  5. Beat the eggs in a bowl, and add the flour coated fish to the egg.

  6. Then coat with the Doritos® Tortilla Chips.

  7. Cook in the air fryer at 200C for 8-10 minutes.

  8. In the meantime, make the remoulade.

  9. Cut up the pickled cucumber, onion, and parsley into large pieces.

  10. In a high-sided bowl, add the capers and apple cider vinegar.

  11. Add the oil and salt, then mix it all with a hand blender.

  12. Then add the whole egg and continue to mix.

  13. Cut the bag open lengthways to make it a walking bag and on top of the Doritos® Tortilla Chips, add the fish, remoulade and a lemon wedge.

  14. Garnish with parsley.
