Wash the vegetables thoroughly.
Slice the vegetables, drizzle with olive oil and season with salt
Cook on a ribbed grill pan on both sides.
Slice up the cheese then place on baking paper on the grill pan so it doesn’t stick.
For the pesto, toast the pine nuts in a dry pan.
In a pestle and mortar, break up the pine nuts, along with olive oil, basil, and garlic.
Grate in some parmesan, season with salt, and continue to grind till you get a pesto texture.
Once we’re done with everything, lay out Doritos on a plate, and then top with the grilled ingredients, and drizzle with olive oil and pesto.
