  1. Heat a bit of butter in a pan and sauté the shallots and leek until softened, then set aside to cool.

  2. In the bowl of a stand mixer, pour in the milk, eggs, and yogurt, and mix using the whisk attachment.

  3. Grate in the carrots and the cheddar. Then add the softened onions along with the butter.

  4. Next, add the Quaker oats and Quaker oat flour.

  5. Mix everything into a dough.

  6. Spoon the mixture into a muffin tin lined with paper cups and let it rest while the oven preheats to 200°C (392°F)

  7. Sprinkle some extra oats on top. (Optional)

  8. Bake for 15–20 minutes.
